The effectiveness of the antioxidant activity of phenolic compounds in the juice samples was also analyzed in relation to their corresponding phenolic antioxidant coefficients. Data structure analysis was carried out using principal component analysis. An artificial neural network (ANN), specifically a multi-layer perceptron, was employed to predict antioxidant activity (DPPH, reducing power, and ABTS) based on total phenolic content, total pigment concentration, and vitamin C content.
